Tortilla Soup

This is incredibly good.  Annie enjoyed it while in NC last month.  This recipe makes quite a bit.  I adapted this recipe from one my mom shared with me a few years ago.  I think this was is 100 times easier than making your own chicken stock.

Super Simple Tortilla Soup

1 cooked rotisserie chicken, meat shredded, no skin 

2 Knorr’s Tomato Chicken Bouillon cubes (can substitute with other chicken bouillon brands — if small cubes use 4)

2 cans of drained and rinsed black beans

2 cans of drained and rinsed white corn

2 cans of diced tomatoes

1 can of diced tomatoes with green chilies (Rotel, or store brand)

Salt

Pepper

Fresh garlic or garlic powder

Chili powder

Cumin


 Dissolve bouillon cubes in about 2 quarts boiling water (add more or less as preferred, can also add more water at the end)

Add chicken, black beans, corn, tomatoes and tomatoes with chilies

Add approx 1 tsp garlic powder, 1tsp cumin, and 2 tsp chili powder — start conservatively and season to taste

Add salt and pepper to taste

Let soup simmer and heat through

 

Serve soup with modest toppings of crushed baked tortilla chips, fat free cheddar, fat free sour cream and chopped avocado. 

Freezes beautifully! For additional spice, use 2 cans of tomatoes with chilies and only 1 can diced tomatoes.  This recipe makes at least 8 generous bowls.
