Cheese Grits

My Tia Kathy makes delicious cheese grits for all of our holiday gatherings, and I used her recipe as part of my NYE feast.  They’re very rich and very good.  Enjoy!

Cheese Grits

Cook 1.5 cups of regular grits in 6 cups of water.  Let the water boil first, add the grits, turn to a simmer and stir regularly for about 15 minutes.

In a bowl, mix together:

3 eggs

1.5 sticks of butter, melted

1 lb of cheddar cheese

Tabasco to taste (I use about 1 teaspoon)

2 1/2 teaspoons salt

1/4 teaspoon garlic powder

When the grits have cooked, pour them in to the bowl with the rest of the ingredients and mix together.  Pour the mixture into a rectangular Pyrex dish (careful not to overfill — they rise some).  Sprinkle the top with paprika, and bake at 350 for one hour.
