Paesano’s Shrimp — For Ali

Paesano’s Restaurant in San Antonio makes the most fantastic shrimp dish!  Ali and her mama, Barbara, celebrate their July 3 birthday at Paesano’s each year, ordering this awesome dish.  My mama, Susan, found the recipe for Paesano’s Shrimp and it has become a favorite at our house as well.  Enjoy!

Paesano’s Shrimp

Shrimp

Half n half

Flour

SAUCE:

3 egg yolks  (at room temperature!)

2 sticks butter

7 cloves minced garlic

Juice of one large lemon or two small lemons

Sauce directions:  Mix egg yolks and lemon juice.  Add half stick of butter and heat until melted in saucepan.  Add garlic and remaining butter.  Stir briskly and constantly until sauce thickens.

GARNISH:

Chives/ chopped parsley on top

NOTE: Sauce for two persons:   1 ½ egg yolks

1 stick butter

Lots of garlic  (4 cloves)

Juice of one lemon

Clean and vein 6-8 large shrimp per person.  Soak cleaned shrimp in Half n half for 15 minutes.   Drain shrimp and dredge in flour.  Saute shrimp on one side in oil (medium hot) approximately 5 minutes or until golden brown.  Do not turn shrimp.  Remove shrimp and place on baking sheet (browned side down) in preheated oven.  Broil for 5 minutes.  Pour sauce over and serve.

TIPS:

Make sure yolks are at room temperature.

Have sauce ready before you broil shrimp.

Don’t let sauce get too thick.
