Hello from the glorious neighborhood of Dorchester, Mass. I’ve been living with one of my dearest friends, Sophie, and her boyfriend (also a dear friend!) Danny, since May 1. I know, they’ve got a great deal of love and patience.
Danny is fabulous cook, and I’ve been meaning to post a couple of his homegrown recipes for a while. Tonight, I’ve got one his specials, carrots with brown sugar. This is simple, homey and absolutely delicious. Enjoy!
What you need:
1 lb of carrots (peeled and diced to 1 inch sticks if you’ve got raw carrots)
1/2 stick of butter (unsalted)
1/2 cup of brown sugar (no substitutes!)
Pinch of salt
For color, a pinch of chopped, fresh parsley – as desired
How to make it:
1. Boil 2 cups of water (this is important because if you have too much water, it takes a long time.)
2. Dice carrots, add to water. Boil for 20 to 25 minutes. (There should still be water at this point.)
3. Add butter and brown sugar. Reduce heat to medium. When the water is reduced to a syrup, you’re ready to serve!!
