So while this recipe makes total sense, I had not been exposed to its awesomeness until recently. Seriously, my new favorite way to eat carrots. It is super easy and just freakin’ delicious. Carrots should be in your local farmer’s market in June or earlier, depending on your zone, and will really add to the flavor of this dish…or try growing some in a deep container, raised bed, or well-worked soil.
INGREDIENTS (for 4-6 servings).
1 lb. carrots, peeled and cut into bite size pieces
salt & pepper to taste
parsley, chopped (or dill)
feta cheese (as garnish)
Preheat oven to 420 degrees. Toss carrots with olive oil to coat and salt/pepper to taste. Roast for about 20 minutes, or until carrots are fork tender and a gorgeous roasted color. Toss with chopped parsley and feta. Serve warm.
