I make this salsa at least once a week and put it on just about everything. This is a great fresh salsa to add to your list.
Adapted from fine cooking magazine
1 medium tomatillo, husked, washed, and coarsely chopped
1 TBS thinly sliced scallion
1 clove garlic
1 jalapeno or serrano pepper, seeded
1 large ripe avocado, pitted, peeled, and coarsely chopped
handful chopped cilantro
salt and pepper, to taste
In food processor, combine tomatillo, scallion, jalapeno, and garlic clove and process until finely chopped. Add avocado, cilantro, salt and pepper and pulse just until combined. Adjust seasonings as needed. Great with chips, black beans, grilled chicken, eggs, etc.
