Amy made this recently in NC, and it’s one of my favorite easy fakes. A pastry chef friend of mine even commented on how delicious and moist it is. It’s one of those things you can do last minute with minimal ingredients, and you’ll fool everyone who eats it. It’s ridiculously delicious, and it has a distinctive flavor. Enjoy!
Yellow Cake Mix (like Duncan Hines) plus the ingredients the box calls for (eggs, etc.)
One can of coconut icing (like the pre-made Betty Crocker icing that you put on German chocolate cake)
A bundt pan
Prepare the yellow cake according to directions, and before you pour the batter into the bundt pan, add the icing as the last ingredient. That’s right, scoop the icing from the can directly into the cake batter and mix. Bake according to the box’s directions.
Once the cake has completely cooled and you’ve removed it from the pan, you may want to sprinkle it with powder sugar. It makes a terrific garnish and is a simple way to cover up any imperfections from the pan.
