Fede and I are making this right now! The house smells wonderfully, and he's already a big fan! I doubled the onion and just used one giant pepper (not sure what it was, Boston's not big on labeling these things at the grocery.) Great recipe and very easy.

My vegetarian friends have always raved about Chile-Cheese Casserole as a main dish. I love the fact that I can make it ahead of time. As Amy indicates, Casserole may be best at room temp or just a bit warm. (Too messy and impossible to serve if hot)

I made these, and they ARE great. I used more spices and nuts than the recipe called for, and I'd do that again. Also, before I stuck them in the oven, I covered the tops with brown sugar, which made them extra delicious.

We made these last night and they were wonderful! If I was doing it again, I'd half the garlic and pepper in the pesto recipe. It was a bit strong for some of the sensitive stomachs here.
