Another jewel from the St. Andrew’s Cookbook. This is my godmother, Tia Melody’s, recipe, but Mama Kay submitted it to the cookbook. Whole green chiles are key — the diced ones will not work. For non-Texans, this is a problem. Wal-Mart is (unfortunately) the only place I’ve been able to find them in North Carolina, [...]

I just bought a crock pot last weekend and made these last night. They were great! (Not Luling, but still very good.)
Smoky-Flavored Barbequed Ribs straight out of Betty Crocker Slow Cooker Cookbook
3 1/2 lbs pork loin back ribs (we’ve used other varieties as well, and they’re just as tasty)
1/4 cup packed brown sugar
1/2 [...]

Brian, of Kirby’s Korner, brought this queso over on Memorial Day. I’m a big fan of queso, and this is some of the best I’ve had. The recipe below will fill a crockpot, but if you’re just having a few people over, it’s easy to half. I think this kind of hearty queso is best [...]

This is incredibly good. Annie enjoyed it while in NC last month. This recipe makes quite a bit. I adapted this recipe from one my mom shared with me a few years ago. I think this was is 100 times easier than making your own chicken stock.

A friend posted this on Facebook today, and I think it’s a super new resource: Homesick Texan. This is a recipe blog written by a displaced Texan about Texas Foods. Enjoy! (Does Ninfa’s make anyone else think Waco?)

Great Salsa
6 roma tomatoes
1/3 white onion
3 jalapenos (seeded for a milder salsa)
salt to taste
Blend all in food processor/blender. You can also add lime juice, cilantro and garlic for variation and to brighten the salsa. If looking for pico de gallo, use the same ingredients, but chop instead of blend and add cilantro (roma [...]

I got this recipe off of one of my favorite food blogs: janetishungry.blogspot.com. It’s a really good one…not quite as good as “And she can cook.” ;)
This chili is not the kind of “chili” I grew up with in Texas; however, it is SO good. It makes a ton, so it’s very good for a Christmas party, [...]

Amy posting here, but this is Corrie’s recipe and crowd favorite!
