Chile Relleno Casserole

Another jewel from the St. Andrew’s Cookbook.  This is my godmother, Tia Melody’s, recipe, but Mama Kay submitted it to the cookbook.  Whole green chiles are key — the diced ones will not work.  For non-Texans, this is a problem.  Wal-Mart is (unfortunately) the only place I’ve been able to find them in North Carolina, [...]

Corrie’s Beef Stew

Posted by Corrie.
Here is my second offering for the week.  This stew was absolutely DELICIOUS!  It pairs well with a Malbec (yes, Annie, you’ve converted me…to goat cheese as well) and sourdough bread.  This recipe is from Martha Stewart.com, but I have adapted it a bit to enhance the flavor. I also halved the recipe, which turned out delicious, [...]

Incredible Ribs from the Crock Pot

Posted by Amy

I just bought a crock pot last weekend and made these last night.  They were great!  (Not Luling, but still very good.)
Smoky-Flavored Barbequed Ribs straight out of Betty Crocker Slow Cooker Cookbook
3 1/2 lbs pork loin back ribs (we’ve used other varieties as well, and they’re just as tasty)
1/4 cup packed brown sugar
1/2 [...]

Easy Teriyaki Kabobs

These were the absolute hit of my 4th of July celebration!  I found this recipe last week in the coupon section of the Sunday paper and decided to make them for the 4th since I adore grilled pineapple.  (Click on the recipe below to make it larger).

My variations to the recipe were that [...]

Killer Queso

Brian, of Kirby’s Korner, brought this queso over on Memorial Day. I’m a big fan of queso, and this is some of the best I’ve had.  The recipe below will fill a crockpot, but if you’re just having a few people over, it’s easy to half. I think this kind of hearty queso is best [...]

I Made Beer Bread!

Posted By Amy
Per Ali’s instructions, I made Beer Bread yesterday.  I am happy to report that it was delicious, and indeed, perhaps even at its personal best when toasted with a bit of butter.  I used Blue Moon’s Harvest Moon Pumpkin Ale, and I liked how it turned out.  I wonder how changing the beer affects [...]

Corrie’s Beeritas

Amy posting here, but this is Corrie’s recipe and crowd favorite!
Corrie’s Beerritas
1 can frozen limeade
1 can frozen lemonade
1 can full of tequila
1/2 can full of triple sec
1 Mexican beer
Combine and pour over ice.

I once put a Sprite in the mix because for some people it was too strong and it tasted pretty good…I like the [...]

Beer Bread (that sounds like a good idea already!)

Posted By Ali
I think I win for posting the easiest recipe.  This is a super easy recipe but SO good.  I’m a big dough eater, but FYI, this dough does not taste very good.  However, the finished bread is wonderful…especially sliced very thin and toasted.  I promise my next recipe will be a bit more [...]

Cheese Soup

Cheese Soup (so yummy…I actually think this is from Kay Scull, and it is DELICIOUS.  It has become a Colvin Family tradition, so we can just pretend…)
SERVES 4-6
4 green onions, chopped
2 grated carrots
3 stalks celery (leaves included), chopped
4 TBS butter (The recipe calls for 6, but I usually get away with less.  You [...]
